Chicken Broccoli Stir Fry

All you'll need to make this stir-fry recipe is some olive oil, some boneless skinless chicken breasts, garlic, chopped ginger, chicken broth, soy sauce, sugar or sweetener of choice but you can leave this out. You'll also need some broccoli and cornstarch. When you're using chicken in a recipe always make sure that you're getting organic, pasture-raised meat when you can. Pasture raised chickens actually contain less fat than factory farmed chickens because they aren't given the high soy-based diets that the other chickens are given to make them gain weight. The pasture-raised chickens are also free from most antibiotics and hormones that are given to factory farmed chickens to keep them growing bigger and bigger. To start making the stir-fry, cut the chicken into one-inch pieces and leave them to the side. Then heat up a large frying pan and use some coconut oil in it to prevent sticking. Add in the chicken, garlic and ginger and cook them for 2 to 3 minutes. Add two thirds of the chicken broth, and then add in the soy sauce and sugar. Cover the pan and cook 4 minutes making sure to stir the ingredients once in a while. Then add the broccoli and cover to cook for four more minutes until the broccoli is tender.

Then, in a separate bowl, mix the rest of the chicken broth with cornstarch together well and then pour into the skillet with the stir-fry mixture. Stir the sauce to coat the food, and it will thicken as it cooks because of the cornstarch. Just be sure not to put cornstarch powder into the stir-fry before mixing it with some water first. It needs to dissolve in cold water or broth first to be able to thicken properly. Once everything is thickened and ready, you can serve over some brown or white rice or even over some rice noodles for something different. Serve up right away and enjoy. This would also be a great lunch time recipe to make and since it doesn't take too long to make you could make it over your lunch break if you go home for lunch. Or, you could make more of this meal the night before and then have leftovers the day after.
